Here's the recipe:<BR/><BR/>Beat until fluffy: 2 large eggs and 1 cup oil.<BR/><BR/>Add: 2 cups sugar and 1 teaspoon vanilla. Whip ingredients together.<BR/><BR/>Add: 2 cups flour, 3 teaspoons cinnamon, 1 teaspoon baking soda, 1/2 teaspoon salt and 4 cups sliced apples.<BR/><BR/>Mix ingredients together and put into a greased 9x13 pan. Heat oven to 325 for a glass pan or 350 for a metal pan. Bake for 45 min. to 1 hour. After cooling, frost with Cream Cheese Frosting.<BR/><BR/>Frosting:<BR/>Beat together: 8 oz. pkg cream cheese, 3 tablespoons butter, 1 teaspoon vanilla, and 2 cups powdered sugar. Frost cake (enough for top of a 9x13 cake in pan).<BR/><BR/>Super yummy and very rich! (If more flavor is desired, sprinkle sugar with a drop of vanilla and a pinch of ginger before mixing.)<BR/>Peel, core, and very coarsely chop 1 1/2 cups of apples. Be sure the apples are crisp so they don't turn to apple sauce.<BR/><BR/>Prepare enough chopped apple to cover the bottom of the pan you'll be using and have a layer of apples 1-2 inches thick.<BR/><BR/>In a loaf pan or deep cake pan, bake the apples in a preheated 325F oven until soft. Remove from oven. Sprinkle the apples with the sugar and cinnamon mixture to coat well.<BR/><BR/>In the bowl of an electric mixer, cream together butter, 1 cup sugar, 1 cup flour, 1 egg, 1/3 teaspoon baking powder and 1 teaspoon almond extract (vanilla may be substituted).<BR/><BR/>Pour batter over apples and return pan to a preheated 350F oven. Applesauce. Especially because you are a slow cooker woman (like I am). Just toss the peeled, sliced apples into the crockpot with a small amount of water and a bunch of cinnamon. I use the apple/peeler/corer thing which makes this a total breeze. Since the apples are sliced fairly thin, it doesn't take much more than 4 hours to cook (we do like some chunks in our apple sauce). Then can it if you like. That is what I did, and although it's a bit time-consuming, how nice it's going to be to pull a jar of applesauce off the shelf in January.<BR/><BR/>Also, I recently posted a recipe on my blog for a caramel apple cake. Homemade Applesauce and apple crisp have been going non stop at my house.<BR/>Applesauce in the crock pot....yum. SO EASY! Just throw the peeled and cored apples into it with your choice of spices...let it go over night, and in the morning...puree and add a dash of sugar if you'd like. YUMMY! It's been a while, but I think you just put them in a covered baking dish.<BR/><BR/>I have a fresh apple cake recipe that my mom used to make. I'll have to hunt that recipe up.
