  3. Kim,

Good morning my friend! Happy Thursday. I, of course, have never heard of Gooseberry Patch, which should earn me extra points, in my most humble opinion.

I link up every Friday to Friday Funnies and have told at least 3 if not 4 more gals so that should count for at least an extra point.

I've hunted all over the city I live in for coconut oil which apparently is some kind of exotic oil that only the east coast of Florida carries because it cant be found centrally...that should earn me 2!

Are you laughing yet? If so, there's another point! Dude, I'm golden grahams on this thing! Yep! There's another one!

I'm cracking my own self up...so rack up another point. And I'll post on my blog later today...so take a gander at the scoreboard..woo 1 more! Nobody else really needs to enter right?

Love ya, my friend! Hugs to you today.

  4. Oh, what a wonderful giveaway! I love the Gooseberry Patch catalogs and have never gotten one of their cookbooks! Awesome! Two stay-at-home moms started this company and it took off in a big way. It's a wonderful success story.

Please enter me in your fabulous giveaway. I'll be posting about it in sidebar on my blog. Also, our favorite fall recipe these days is the one for winter squash soup that I posted on Nov. 4 on my blog. I certainly give you permission to include that in your next ebook! Let me know if you want me to e-mail you a Word file of it, OK?

Thank you so much, sweet friend!

  9. I absolutely love cookbooks. I don't have this one, but have seen Gooseberry Cookbooks at a local gift shop.

One of my favorite fall quickies is:

Take whole cranberries and chopped in food processor. I usually add a little bit of sugar to offset the bitterness. Add a bunch of cilantro and if you are daring, add one hot pepper (minus seeds) and get to desired consistancy.

Pour this over a block of cream cheese and serve with crackers.

  12. Great giveaway! Please enter me to win - I'm headed over to post on my blog now!

And here's my favorite fall recipe:

    Sweet Potato Casserole

    5 sweet potatoes, sliced
    1/4 cup reduced fat margarine
    1/2 cup packed brown sugar
    3 tablespoons orange juice
    1 pinch ground cinnamon
1 (10.5 ounce) package miniature marshmallows

Preheat oven to 350 degrees F. Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil, and cook until tender, about 15 minutes. Remove from heat, drain, and mash. Place mashed sweet potatoes in large bowl, and use an electric mixer to blend with the margarine, brown sugar, orange juice, and cinnamon. Spread evenly into a 9x13 inch baking dish. Top with miniature marshmallows. Bake for 25 to 30 minutes in the preheated oven, or until heated through, and marshmallows are puffed and golden brown.

  17. Kim, what a fun idea! I love, love, love those cookbooks! I have a new favorite recipe that I just tried this morning. I thought of our friend Erica who adores anything pumpkin. I found this recipe on the Crock Pot lady's blog and I just had to try it. It's delicious...reminds me of Starbuck's Pumpkin Spice Latte. Here is the recipe for:

    CrockPot Pumpkin Spice Latte

    --2 cups milk (I used 1%)
    --2 T canned pumpkin
    --2 T white sugar
--2 T vanilla (not a typo. it asks for tablespoons)
    --1/2 tsp pumpkin pie spice
OR: 1/4 tsp cinnamon, 1/8 tsp cloves, 1/8 tsp nutmeg, and a teeny tiny pinch of ground ginger
--1/2 cup brewed espresso or 3/4 cup strong brewed coffee

    --garnish with whipped cream (optional)

    The Directions.

This will make enough for 2 people to have a big mug with a bit leftover. If you are having friends over, adjust the recipe accordingly. I used a 4-quart crockpot, but as small as a 1.5 quart will work with these amounts.

Add the coffee/espresso and milk to the crockpot. Whisk in the pumpkin, spices, sugar, and vanilla.

Cover and cook on high for 2 hours if everything is cold. Whisk again.

Ladle into mugs, and garnish with whipped cream and additional cinnamon. Delicious!!!!
