Chicken Caesar Lasagna from Lisa @ Stop and Smell the Chocolates. I feel like I should give you something lol. My daughter had a lot of recipes to choose from. I thank you all for sending them to me and I am still going to try many of them. But ultimately the Chicken Caesar Lasagna won out. Let me tell you something. This was a HUGE hit! EVERYONE loved it. It is definitely a keeper in our house. I want to give a public thank you to Lisa and post the recipe for all to try. I am posting it but all the credit goes to Lisa as she is the one that gave it to me. The night went wonderfully. My daughter had a great time and received some very nice things. The two desserts I made where out of this world good. All in all it was a very happy night for the taste buds and not so happy for the thighs, *sigh*. Here is a picture of the Lasagna and the recipe below.
Chicken Caesar Lasagna
9 dried whole wheat lasagna noodles
2 (10 oz) containers refrigerated light alfredo sauce
3 tablespoons lemon juice
1/2 teaspoon cracked black pepper
3 cups chopped, cooked chicken breast
1 (10 oz) pkg. frozen chopped spinach, thawed and well-drained
1 cup bottled roasted red sweet peppers, drained and chopped
3/4 cup shredded Italian blend cheese
1. Preheat oven to 325. Cook noodles according to package directions. Drain; rinse with cold water; drain again. Meanwhile, in a bowl combine alfredo sauce, lemon juice, and black pepper. Stir in chicken, spinach, and red peppers.
2. Lightly coat a 3-quart rectangular baking dish with nonstick cooking spray. Arrange 3 noodles in bottom of dish. Top with one-third chicken mixture. Repeat layers twice. Cover; bake for 45 - 55 minutes or until heated through. Uncover; sprinkle with cheese. Bake, uncovered, 5 minutes more or until cheese is melted. Let stand 15 minutes before serving. makes 9 servings.
Here is dessert. A "small" piece of Double Chocolate Tiramisu and Peanut Butter pie! Yummo.
And last but certainly not least, the birthday girl. The Tiramisu had to pose as the birthday cake and I must say it didn't make for a very "pretty" picture lol. It looks like a loaf of chocolate with 2 candles stuck in it lol. Oh well, that's what she wanted.

Yum. that lasagna and the peanut butter pie looks awesome. Two of my favorite things. I may need to try that. I have a chicken and broccoli lasagna that's good too.
