This week what is working for me is freezing cookie dough. Have you ever done that? It just makes life so much easier down the road. I will usually make a double batch since I have all the stuff out any way. This way you can bake some now and have some for later. All you have to do is roll you dough into serving size balls. Line a cookie sheet with wax paper, set them on there and freeze for about an hour. Then simply take them off the sheet and put them in a freezer ziploc and Voila! Cookies for later! These are great for unexpected company. When you want to you use them. Simply unthaw them (which doesn't take that long) and pop them in the oven for the designated time for that cookie recipe.
This particular recipe freezes very well. It's my Peanut Butter Cup Cookie recipe.I hope you give it a shot. I think once you do this you'll be hooked. It's better than buying the rolls of cookie dough at the store!!!

ReplyDeleteI am so impressed with your great idea! When my kids went to public school they always sold the frozen cookie dough ($14 a pound or something ridiculous)... so we know frozen cookie dough works. I just never thought of freezing my own in cookie-size pieces. Love it!

I do this all the time! I made and froze about 75% of my holiday cookie dough in November so it wouldn't take me forever to bake all the cookies in December. On Monday I easily baked 6 different types of cookies to send to my husband's offices in a pretty short time. I just thawed, baked, and decorated. I'll pull out the last few frozen chunks of dough this weekend to make with the kids to have for Christmas.

ReplyDeleteI have quiet a few icebox cookies and freezer cookie recipes too. I love having cookies made ahead of time and available..now if I only actually made them.. I'd be set.. LOL

ReplyDeleteI've done that too. I have a friend who is an excellent baker who bakes her extra large cookie batches and then freezes them. I've had some of her thawed out cookies and you'd never know they had been frozen.
