If you’ve hung around here long enough you know that I am a big fan of Gooseberry Patch. The obsession started many years ago with their Christmas book series but it’s since evolved into many of their other cookbooks as well.
Here’s one thing I love about their cookbooks. They are composed of real recipes from real people like you and me.
I also found that the recipes are easily converted to suit many needs. We for one are a gluten free family. I can easily take a recipe and make it gluten free by simply replacing a few ingredients.
Do you cook from scratch? I do. So if it calls for a can of cream of chicken soup or something just replace it with your homemade. It’s as simple as that. Don’t let ingredients scare you. You’re the boss. Who’s the boss? You’re the boss. *wink*
This particular cookbook was right up my alley. I don’t use my crockpot as much as I would like, so when I was sent this book to review, I got all excited.

I’ve already tried a few that were easy peasy and got 5 thumbs up from my family.
Here’s one of them.
Thai Peanut Chicken
3/4 cup salsa
1/4 cup creamy peanut butter
3/4 c. light coconut milk
2 T. lime juice
1 T. soy sauce
1 T. sugar
2 cloves of garlic, finely chopped
2 T. fresh ginger, peeled and grated or 1 T. ground ginger
2 lbs. boneless skinless chicken thighs cut into pieces (I used chicken breasts and it came out fine)
Cooked Rice
Garnish: Chopped Peanuts and Chopped Cilantro
Combine salsa, peanut butter, coconut milk, lime juice, soy sauce, sugar, garlic and ginger in a slow cooker; mix well. Add chicken; stir to coat. Cover and cook on low setting for 8 hours (I did high for 4) or until chicken is very tender and sauce has thickened. Serve over rice; garnish as desired. Serves 4.
It was really good. I’ve also tried the Skinny Italian Creamy Chicken. That was super good and easy too. The next recipe on the list is Crockery Chicken Parmigiana.

ReplyDeleteI love my crock-pot and I was just thinking two things that would make the cookbook a lifesaver. One - I need more crock-pot recipes, and two - I was considering writing a cookbook using basic ingredients. It's true so many cookbooks use ingredients most of us don't have. I really need cookbooks that have recipes that are easy and simple with ingredients I already have at home. I would love to win this!

Whatever did we do before slow cookers/crock pots?? I use my four for soups; stews; pulled pork; bbq beef; bread;etc. I'm always looking for something new to cook in them. Thanks for having a giveaway!!

ReplyDeleteI love my crock pot to make my venison stew in! Chunks of pre browned venison, then add carrots, potatoes, onions and corn too! I add a little beef base to the slow cooker and salt and pepper and add the lid and leave it alone till done! Biscuit go well. Such a hearty meal on a cold Michigan day!
