Soft Pumpkin Cookies- GF Conversion Recipe!

Here’s another nice Fallish recipe for ya. These tasted really good and pumpkiny. This recipe comes out of the Gooseberry Patch Garfield Recipes with Cattitude.

And as always my gluten free conversions are in (parenthesis )and in italics beside the original recipe’s ingredients. I try to make things a bit healthier too, so you also get my “healthier” conversions with each recipe. *smile*

Soft Pumpkin Cookies

2-1/2 c. all purpose flour (I used 1 cup brown rice + 1 cup Almond flour + 1/2 cup arrowroot powder)

1 t. baking powder

1 t. baking soda

1-1/2 t. cinnamon

1/2 t. salt

1/2 c. butter, softened (I used 1/4 cup butter and 1/4 cup coconut oil)

1-1/2 c. sugar (I used coconut sugar)

1 c. canned pumpkin

1 egg, beaten

1 t. vanilla extract

In a large bowl, combine flour, baking powder, baking soda, cinnamon and salt. In a separate bowl, beat together butter and sugar until blended. Stir in pumpkin, egg and vanilla until smooth. Gradually add flour mixture to butter mixture; stir well. Drop dough by rounded tablespoonfuls (I used a cookie scoop) onto greased baking sheets. Bake at 350 degrees for 15 to 18 minutes (If going gluten free reduce time to approx. 12 minutes), until edges are firm. Cool cookies on baking sheets for 2 minutes; transfer to a wire rack. Cool completely; drizzle with Powdered Sugar Glaze.

*(You don’t want to overcook these. Gluten free things will usually be a bit crumbly if you over cook, so keep your eye on them.)

Makes about 2 dozen.

Powdered Sugar Glaze:

2 c. powdered sugar

3 T. milk

1 T. butter, melted

1 t. vanilla

Combine ingredients in a small bowl; mix until smooth. (My glaze looks brown because I made my own powdered sugar using coconut sugar.)
