This post is not about Hot Chocolate!


It is in fact about using the hot cocoa that you would use for hot chocolate in something besides, well, hot water!

As most of you know, when my best friend and I get together it usually involves 2 things. Coffee and chocolate. It's girl time and we take full advantage of it. (It for sure isn't helping us take the excess weight of Christmas off but we can't seem to resist it).
BUT we did manage to take an old recipe and make it not only "better" for you but tastier too.
You all remember those No Bake Cookies don't you?
Well here is the kicked up version. We LOVE these and you 'll never go back to your old ways after trying these.
So without further a do...

Kim and Kathy's Kicked Up No Bake Cookies!

Ingredients:
  • 1/2 cups white sugar
  • 1/4 cup butter
  • 1/4 cup milk
  • 1/4 Ghiraradelli Chocolate Hazelnut Hot Cocoa
  • 1 1/2 cups quick cooking oats
  • 1/4 coconut
  • 1 teaspoon vanilla extract

Directions

  1. Mix together sugar, hot cocoa,butter or margarine, and milk in a saucepan. Bring to a boil and boil for 2-4 minute.You want it to get to the soft ball stage. Very important if you want your cookies to hold together.
  2. Remove from heat and mix in vanilla, quick oatmeal, and coconut. Drop by spoonfuls on waxed paper.
Makes 15 cookies!
Let set for how ever long it takes you to make coffee!
YUM!

Speaking of coffee (didn't you just love that transition?) that is what we are going to talk about next!
I know that there are a few of you out there that drink your coffee black and I've been fervently praying for you, but for those of you who like a little sunthin' sunthin' in your coffee, then you are going to love this.
Usually while the coffee is brewing I put my creamer in my cup and add my sugar. But lately I've been reducing the sugar to half and putting a rounded TBS of the Ghiraradelli Hot Cocoa in there. It's like Mocha Heaven and doesn't cost $3.79.

  3. I was thinking of you when I tried my hand at making homemade peanut butter cups. My husband loved them! I'm going to have to do a post on that sometime.

    I think the snorting camera man in the background was the super hilarious in your Friday Funny post.

    Also, thanks for your sweet comments regarding my last post. I slept much better last night. You so right when you say outlook is everything. Thank God I've got Him to carry me through.

  5. Glad you like coffee. I don't but I won't hold that against you. I don't really like hot drinks.

    However, I will enjoy hot chocolate on occasion, and I like a little whipped cream in it!

  6. Sounds delicious my friend!! I am curious as to what changes you made (besides the cocoa) as my no-bake recipe doesn't have coconut, but does have peanut-butter.

  8. LOL...notice how there is no photo...you'd think we could take the time to get one before we scarf these bad boys down, eh? :) Not a chance.
    Oh, and they don't have to be quick oats, I just use regular rolled oats. :)
