Baked Blueberry Oatmeal

Baked Blueberry Oatmeal

Here is another recipe out of the Gooseberry Patch Cookbook, Good-For-You Everyday Meals.

You could easily make this for breakfast or a ladies brunch. It got thumbs up from the whole family.

As always, I try to make recipes even more healthy and better for you by changing some things up. But you must know that we don’t like things overly sweet, so remember that if you try my conversions. My changes are always in italics and in parenthesis.

Baked Blueberry Oatmeal

4 c. old-fashioned oats, uncooked

1 c. sugar (I used 1/2 cup of coconut sugar)

2 t. baking powder

2 c. milk (I used almond milk)

3/4 c. butter, melted and slightly cooled (I used coconut oil)

4 eggs, beaten

3/4 c. applesauce

1 c. blueberries, thawed if frozen

Optional:brown sugar

In a large bowl, mix together all ingredients except blueberries and brown sugar. Spoon into a lightly greased 13”x9” baking pan. Add blueberries; push down into mixture. If desired, sprinkle brown sugar on top. Bake, uncovered, at 350 degrees for 40 minutes, or until golden on top.

Makes 8 servings.

*Since I was omitting a 1/2 cup of sugar I also omitted the applesauce.*

IMG_6656 I tried pushing the blueberries down into the mixture like is said to do but they kind of remained at the top. Not a big deal though. I’d probably just mix them in the batter next time.

  2. Hi Kim, I love this recipe and have a similar one but it soaks overnight-which means more thought needs to go into making it. I often add dried cranberries or blueberries; I am going to print yours out and try it. Thanks for sharing my friend!
