Baked Meatballs

These are so easy to make and taste so good.

IMG_4197

Ingredients:

1 1/2 lbs of meat of choice. I used ground turkey in this recipe

2 eggs

1 cup of bread crumbs (I used ground up oatmeal)

1/4 cup chopped parsley

1/2 of an onion, minced

1/2 cup parmesan cheese. shredded

1 tsp. garlic powder

1 tsp. Italian seasoning

1 tsp. salt

1/2 tsp. pepper

Directions:

Mix all ingredients together in a medium bowl. Preheat oven to 400 degrees.

I use a small cookie scoop so I get the same size meatballs but you can use a tablespoon or whatever you have. Place meatballs on a cookie sheet lined with parchment paper and bake for 20 minutes. After 20 minutes turn the meatballs over so they brown more evenly. Return to oven for 5-10 more minutes.

Serve with your favorite pasta and sauce. YUM!

  2. I just bought a cookie scoop recently! I've avoided meatballs cause they would never come out even due to my rolling them in my hand. Gotta give these a try!

L loved your comment on my bikini post. As a mom to sons, I want to set the standard of beach wear, not the world. As for you training your daughter - way to go!! I love and appreciate moms like you! Have a great weekend!
