You Can Have Your Pumpkin and Eat It Too!

It's no secret that I've been hording my last 3 cans of pumpkin for the past few months. 

Last year I stocked up (with 6 cans) after hearing about the pumpkin shortage. You can read about that here.
I reluctantly used 3 cans between that time and now because I can only go so long before I crave something that has pumpkin in it. 
About 3 weeks ago on my routine trip to Publix I was once again strolling down the canned pumpkin aisle (because I like to stroll) and to my surprise that hole that was once empty was now filled with Libby's Pumpkin Puree. Apparently there is still a lack of pumpkin crop, but we are told that they should meet demand. So what does one do with THIS information? One continues to buy one can of pumpkin every time she goes to the grocery store.
I have needs people. Deep rooted pumpkin puree needs.
I have done without and I will go without no more. 
There are breads, scones, smoothies, lattes, biscuits and soups to be made.

So what should YOU do with this information? If I were you, I'd click out of your browser right now and go get you some pumpkin. It just makes a person happy! LOL!

  2. It is funny you should post about craving pumpkin. I was just on the phone with my sis who is coming up for visit next weekend with all 6 of her kidlets and we decided to make healthy pumpkin bars as a snack for the kidlets.

    Here is a pumpkin money saving tip. Draw on one of your jackolaterns instead of carving it. Use that one to put in the oven and bake until pumpkin is soft enough to blend or go through a grinder. Freeze pureed pumpkin flate, in two cup increments in quart bags. You'll be amazed at how much pumpkin you'll end up with!

    Actually I just bought a pumpking struessel kit for the kids and I to make soon so I will be craving pumpkin no more either. Well, at least for a day or so :)

  6. I just made pumpkin cookies (recipe like) and I would have loved a can on purée pumpkin but you can't buy it in australia, ever. Very sad.

    Kids loved the cookies, really yummy.

  11. I am feeling the need to stock up on the pumpkin as soon as I see some my friend!! I did roast my own pumpkin recently and froze some pumpkin puree, so I have the equivalent of 1 can. I also have a can in the garage with a June 2010 date on the bottom that I haven't thrown away yet, you know, just in case there is no other pumpkin in the world and I decide to ignore that date. :)

  12. You're too funny! I hate to tell you this, but I don't do pumpkin...at least not for eating. Carving...yes. Eating...no, no, no. So if it makes you feel any better, YOU can buy the pumpkin that I will NOT be buying. Next time you're at the store, buy TWO cans!
